A bigger and better food offering for Katsubi
We completed a food and beverage offering for Katsubi in May 2019. The interior fit-out formed part of the new Bayfair Shopping Centre dining precinct located in Mt Maunganui.
Bayfair’s precinct expansion was Katsubi’s opportunity to create a bigger and better food offering by giving diners a choice of cooking their own meals or selecting freshly cooked food from the menu.
A Chicken Dak plus Donburi bar represented minimalist Japanese architecture and design style. The base building, designed by Woodhams/Meikle/Zhan Architects, had a unique shape and form that influenced the interior spatial layouts significantly. This created several challenges which the design team resolved through a close, collaborative process with the client and other consultants.
Japanese design elements were incorporated to showcase Kasubi’s origin, and these were represented through natural materials, soft timber elements and patterns. Wood is a widely-used, natural material in Japanese homes to create warmth and comfort – a dining experience Katsubi aims to provide for their customers.
The overall look and feel of the fit-out reference the importance of nature in Japanese design. Together with planting and branding, the identity of the environment is uniquely Katsubi. A taste of Japan is delivered not only in the cuisine but in the welcoming, humble surroundings.
